Bikini Recipe

Yields 10 guests

Ingredients for the Clementine Cordial (yields 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar

Ingredients for the Cocktail (produces 850ml, enough for 10)

400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch

Method

Making the Citrus Syrup: Place all the items in a pan, bring to a light boil, mixing until the sugar dissolves. Next, take off the stove and leave to cool down fully. Transfer to a sterilised bottle, close it and refrigerate it in the fridge, it will last for around four weeks.

For the Premix: Pour the specified liquid ingredients into a sizeable container, allow it to infuse for an hour, then filter it best through muslin, making it perfectly clear.

When ready to serve: Measure 85ml from the premix into your stirring glass containing ice, and stir gently for a minute until cold. Pour into an cold coupe glass or equivalent, decorate with the cranberries and finish by giving it a quick spritz with the mandarin essence over the drink.
